Don't Be Alfredo Pasta
Prep time: approximately 15 minutes
Cooking time: approximately 15 minutes
Before you start cooking make sure to get out these items:
Large pot for pasta
1 bag of frozen corn
1 pound box of pasta of your choice
Salt to taste
4-5 garlic cloves
1 table spoon of fresh, chopped basil and/or parsley
Parmesan or Romano Cheese
^ Step 1
Boil frozen corn for approximately 8 minutes, then strain, reserving a cup or so of the cooking water in a small bowl. When boiling the corn, set a large pot to boil with water for the pasta as well.
^ Step 2
Place the corn into a high speed blender, adding a half cup or so of the reserved liquid. Blend at a high speed until it is smooth and pureed into a creamy sauce consistency. Add in a bit more liquid if needed.
^ Step 3
Meanwhile, mince the garlic cloves.
^ Step 4
In a large skillet, set to medium heat, add in a few tablespoons of olive oil. Add in the minced garlic and saute. Be careful not to burn the garlic, about 1-2 minutes.
^ Step 5
Boil your favorite pasta then strain.
^ Step 6
Place pasta into large skillet with the garlic and top with corn sauce.
^ Step 7
Chop a bunch of basil and/or parsley.
^ Step 8
Toss pasta with the sauce and stir in the fresh chopped herbs. Add more salt to taste if necessary.
^ Step 9
If you like cheese, grate some Parmesan or Romano cheese and sprinkle on top.
^ Our Review
I, Taylor, loved this dish!! The pasta tasted creamy and you would never guess the main ingredient wasn't dairy. If you choose to top the pasta with grated cheese like I did, it adds in extra flavor! I would 110% recommend making this dish for yourself at home!!
I, Ashley would totally agree. This recipe is great if you want the taste of Alfredo but you can't eat cheese. If anything it tastes even better! Go ahead and try to see if anyone in your family can guess what it's made from. Once you start eating you can't stop!!
