If you can’t get into Tonkatsu Tamafuji, snag a table at Ginza Bairin. The Tokyo tonkatsu transplant in Waikiki is another place that’s laser-focused on crispy breaded pork, mountains of cabbage, and grind-your-own sesame seed tonkatsu sauce. The cutlets dribble with juice when you take a bite, and the smear of hot mustard on the side is zippy and nose-clearing. We typically go for the pork tenderloin katsu, but anything involving the gravy-like curry is also a great bet.
